8 sprigs of fresh rosemary 1 tablespoon allspice, coarsely crushed 220 g caster or dark sugar 125 ml lemon juice, freshly squeezed 125 ml lime juice, freshly squeezed 2 lemons or limes, cut into cubes or rounds ice cubes |
1. In a medium-sized saucepan, combine 500 ml of water with the caster sugar and add the rosemary and allspice wrapped in cheesecloth. When the water starts to boil and the sugar dissolves, remove the saucepan from the heat, cover with a lid and let it sit for an hour. |
