1. Preheat the oven to 180°C. Add the pistachios to a saucepan of boiling water and blanch or steam them for 2-3 minutes. Then drain them, peel them, spread them on a baking sheet lined with baking paper and bake them for 8 minutes to dry them out. Let them cool completely and blend them finely.
