Pistachio cookies

Pistáciové sušenky

Makes about 90 cookies / Preparation time 30 minutes / Baking time 15 minutes

2 pinches of salt
90 g caster sugar
225 g butter, softened
powdered sugar for decoration

1. Preheat the oven to 180°C. Add the pistachios to a saucepan of boiling water and blanch or steam them for 2-3 minutes. Then drain them, peel them, spread them on a baking sheet lined with baking paper and bake them for 8 minutes to dry them out. Let them cool completely and blend them finely. In a bowl, add the flour and salt to the pistachios and mix.
2. In a food processor, beat the sugar and butter until light and fluffy. Gradually add the flour and pistachio mixture and mix until a dough forms.
3. I roll the dough into balls, each weighing 7 grams, and place them on a baking sheet lined with baking paper. I bake for 15 minutes. I sprinkle the cookies with sugar while they are still hot and let them cool. When they have cooled, I sprinkle them with sugar again for decoration.
