Cinnamon pancakes

Do 30 minut Hlavní jídlo Sladké Sladkosti Snídaně

Skořicové lívanečky

Serves 4–6 / Preparation 15 minutes / Roasting 15 minutes

2 teaspoons baking powder
a pinch of salt
50 g caster sugar
4 eggs, yolks and whites separately
370 ml buttermilk
200 g ricotta
vegetable oil for frying
powdered sugar and cinnamon for coating
125 g melted butter for drizzling

1. In a bowl, mix the flour with baking powder and salt, add the sugar, egg yolks
and buttermilk and mix or whisk everything thoroughly. Beat the egg whites until stiff and carefully fold them into the dough, along with the ricotta, in parts.
2. Lightly oil the pan and heat it over medium heat. Using a spoon or small ladle, pour a small amount of batter into the pan and fry for about 2 minutes on each side, until the pancakes are nicely fluffy and lightly golden.
3. In a bowl, mix the powdered sugar and cinnamon. Immediately after frying, while still hot,
I coat each pancake in it, place them in a bowl and pour a spoonful of melted butter on each layer.
4. I can eat cinnamon rolls anytime, but I like them best with pea soup.
