400 g linguine pasta 300 g fresh ricotta 2 tablespoons olive oil 1 clove of garlic, pressed zest of 1 organic lemon 4 tablespoons lemon juice salt handful of fresh thyme leaves + for garnish 50 g parmesan, grated + for garnish |
Cook the pasta according to the instructions on the package. While it is cooking, mix all the other ingredients in a large bowl. Drain the cooked pasta. Add a few tablespoons of the pasta water to the bowl, add the pasta, mix, sprinkle with thyme leaves and Parmesan cheese. |
